What is the difference in the chain that makes it an on-road or a on/off-road chain? Also, is the v-link good for mud too?

Off-road chains are built to be stronger as they will be subjected to more stress than a tire chain for on-road use only. The chains will also use larger links so to provide better traction off-road.
The v-link chains like the Titan Chain Snow Tire Chains # TC2828 are not rated for mud use even though they are an on-road/off-road chain. The V-link works very well on ice as it creates several traction points. These are designed for 15" - 22" wheels, be sure to verify your exact size tire for fitment.
For the best mud chains the Titan Chain Snow Tire Chains # TC2228 use rounded twist links to provide the best traction in deep snow and mud. These are designed for 15" - 22" wheels, be sure to verify your exact size tire for fitment.
You will need a set of Titan Chain Multi-Arm Rubber Tire Chain Adjusters # TCMA2 with the tire chains to keep them tight on the tires for the best traction.
