There are a few differences between the Curt Hitch # C78KR and the Draw-Tite Hitch # 75214 for your 2021 Ford Edge. First off, the Curt offers a 675 pound maximum tongue weight/4,500 maximum gross towing weight while the Draw-Tite has a 600 pound maximum tongue weight/4,000 pound gross towing weight. In order to confirm whether your vehicle can accommodate that much weight, I recommend that you confirm the maximum weight capacities with your owner's manual.
As for other differences, the ground clearance for the Curt is about 8 inches while the ground clearance for the Draw-Tite is 10-1/2 inches. They both have the same measurement from the center of the hitch pinhole to the outside edge of the front bumper (6 inches). This is important when deciding what hitch-mounted accessories will clear your rear bumper.
With all of these comparisons considered, I recommend the Draw-Tite hitch because it is a more economical option and it will more than likely give you enough weight capacity for your intended purposes. If you need help with the installation process, I linked a video to help you with the process.
