For the best trailer hitch for a bike rack on your 2021 Subaru Ascent, I recommend the etrailer Trailer Hitch - 2" # e55ZR. This hitch has a maximum tongue weight of 750 pounds, which is more than enough capacity to hold a bike rack with bikes mounted. Another great thing about the etrailer hitch is that the distance between the center of the hitch pinhole to the face of the rear bumper is 2 inches. This short distance will allow virtually all bike racks to be compatible without issues regarding bumper clearance.
As far as the bike rack, I recommend the RockyMounts MonoRail Bike Rack for 2 Bikes - 2" Hitches # RKY10004. The MonoRail has a per-bike weight capacity of 60 pounds and will be able to accommodate tires up to 5 inches wide. Also, since the closest part of the rack is 5-3/4 inches from the center of the rack's pinhole, you will not have any bumper clearance issues.
If you have an exceptionally heavy bike and/or bikes with fenders, I recommend going with the HollyWood Racks RV Rider # HLY64FR.
