It is definitely safe to install a trailer hitch on your 2020 GMC Terrain with a panoramic roof. The only thing on your vehicle that will affect whether a hitch fits or not is if you have the model that runs on Diesel.
For your application I recommend installing the Curt Class III Hitch Receiver # C77FR because it has a thicker powder coat than the Draw-Tite alternative so it will hold up better over time. Attached is an installation video of this being installed on a 2020 Terrain as well as a photo of what the final product looks like.
If you are planning on towing then you'll need wiring kit # C94FR. To round out your towing equipment you'll need a ball mount kit like part # C45534.
For a bike rack or cargo carrier I recommend the Kuat NV 2.0 # NV22G bike rack or the Curt Carrier # C18152.
