I would be happy to help!
The only triple axle disc brake kits currently offered all have 1/2" wheel studs so we will need to piece a kit together for you.
I recommend the Kodiak Disc Brake Kit - 13" Hub/Rotor - 8 on 6-1/2 - E-Coat - 7,000 lbs # K2HR79E which will fit the 7000lb Dexter axles you have, and gives you the 9/16" studs you mentioned. Since you have 3 axles you will need 3 of these kits.
Next you will need brake lines of which I recommend the HydraStar Hydraulic Brake Line Kit - Triple Axle - 25' Long, 3/16" Main Line # HS496-253.
Now you will need an electric over hydraulic actuator, I recommend the HydraStar Electric Over Hydraulic Actuator for Disc Brakes - 1,600 psi # HBA16 which will work with triple axle trailers like your.
Moving on you will need a break away kit # C52044.
Lastly you will need to make sure the trailer brake controller you have in your tow vehicle is compatible with electric over hydraulic brakes. If it is not I recommend going with the Tekonsha Prodigy P3 # 90195 which is an extremely reliable trailer brake controller and is compatible with electric over hydraulic brakes.
I included videos for each of the products mentioned for you to to take a look at.
