To install a 7-way connector on your 2021 Honda Odyssey you will first need to install a 4-way connector using the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118753.
With a 4-way connector installed you can then install a 7-way connector using # ETBC7 which works with traditional trailer brake controllers like the Tekonsha Prodigy P3 # 90195, or the option I recommend is using the # ETBC7L and the Curt Echo Wireless # C51180.
The # ETBC7L will plug into your newly installed 4-way connector and will only require you to run a power wire to the battery of your vehicle with the included 40 amp circuit breaker, and ground the white wire to the frame of your vehicle.
The reason I recommend the # ETBC7L and # C51180 is due to the Echo plugging directly into the 7-way connector meaning you will not need to route any wires inside of the passenger compartment, and will not need to drill any holes in the dash of your Odyssey to mount a controller.
I included videos of the products mentioned for you to take a look at.
