Can you help me find the right snow/mud chain for my 2011 Ram 3500 single wheel 4x4. Tire size is 255/80R17

For the 255/80-17 tires on your Ram, I'd recommend the # TC2237 from Titan Chain. These chains are rated for deep snow or mud use and the twisted links are specifically designed for good traction on or off road. Also recommended is a set of adjusters like # TCMA2, which will do a good job of keeping the chains taut.
The # TC2828CAM v-bar chains you'd looked at aren't the best choice for muddy off-road conditions.
