If the trailer hitch on your 2000 Ford F-350 features a 2-1/2" inner receiver opening the Curt Hitch Extension # C45048 you referenced will fit and work well to provide up to a 34" extension to clear your camper overhang. Just keep in mind that the other end provides a 2 inch receiver opening for your ball mount.
With that being said based on the 17,000 pound capacity you mentioned for your current hitch I think you might have a 2" hitch receiver. If that is the case the Curt Extension won't be compatible without an adapter, and I don't recommend using an additional hitch adapter with this type of extension as it's going to create too much instability.
The longest hitch extension we have available that can be used with your existing hitch (if it is in fact a 2" receiver) is the Curt Extender # C45796, which will provide an 18" extension. Please just keep in mind that when using this or any similar extension the weight capacity of your trailer hitch will be reduced by 50 percent. You will need to make sure the tongue weight of your trailer or accessory doesn't exceed this reduced limit.
You could then pair the above-mentioned extension with a longer ball mount like the Brophy # BM20, which with its own 13-1/4" extension would provide you with a total extension of 33-3/4". I have attached a couple short video reviews on these products that you can check out as well.
