I can't find anything online to help with the coupler size of your 1978 Airstream 31 Excella, but based on the gross vehicle weight rating, you will most likely need a 2 inch hitch ball like # 63845.
If you don't already have a ball mount, I recommend the etrailer.com Ball Mount Kit for 2" Hitches - 7,500 lbs # 989900. This will give you the 2 inch ball along with two different ball mount options to give you up to a 2-3/4 inch rise or a 4 inch drop. This kit also gives you the pin and clip and a storage bag.
