To make this easy and clear, I will just answer your questions with numbered answers below.
1. According to the instructions for Draw-Tite hitch 75684, you will not have to remove or lower the spare tire in order to install the hitch. I have included a link to the instructions below.
2. The shorter bracket, part # 18140, should be sufficient. With it you will need the bracket that holds the 4-Way flat, part # 18144.
3. The cross-tube of the hitch on the passenger side is bent to allow sufficient space between the hitch and the muffler and exhaust tips. It will not fit dual exhaust models, tips on both sides of the vehicle. Dual exhaust is different than dual tips which is what your 4 cylinder should have.
4. I may need clarification on this question. 4 Cylinder and 6 Cylinder refer to the number of piston cylinders the engine has. Different engine sizes require different exhaust systems on a particular vehicle and the different exhaust can cause hitch fit issues, but that is not the case with your 2011 Sorento.
5. The tow capacities are labeled on the passenger side of the hitch as well as in the instructions. The hitch can pull a gross load of 3,500 pounds with a 350 pound tongue weight. With a weight distribution system, that capacity is increased to 5,000 pounds gross, and 500 pounds tongue. Please check your vehicle owner manual before towing. It may have lower ratings, in which case you would need to abide by those. When towing, always abide by the ratings of the lowest rated component, be that hitch, vehicle, draw bar etc.
