In 2000 there was both a GMC Sierra model and a GMC C/K series with a Sierra trim option. If yours is an actual Sierra model then to add a compatible 7-Way you will need # HM40975 if there is a wiring harness up above the spare tire with a round plug. But if it is just a wire bundle, no plug, you can use # PK11898. It has the following wire functions:

Red - Left Turn and Stop
White - Ground
Blue - Electric Brakes
Green - Right Turn and Stop
Black - Battery
Brown - Running Lamps
Yellow - Backup Lamps

On your truck the wires should be: Yellow Wire is the left turn and brakes, Dark Green Wire is the right turn and brakes, Brown Wire is for the tail lights, and White is the ground. Often if the loom is cut back, two more wires will be found. The Light Blue wire provides a lead for a camper shell brake light. The other, a Light Green wire, is for the reverse lights. The only thing missing is a wire for brake output which you would have to run manually to a brake controller using wire # 12-1-1.

If your truck is a C/K model with Sierra trim then you would have to first install a 4-Way, # 118315, and then use installation kit # ETBC7 to install a 7-Way. I have included some links that show and explain the ETBC7 installation.
