If you want a cover for your actual hitch ball itself you can use # 42250 or one of the others shown on the included link.
In the case of your 2007 Chrysler Aspen the only size of hitch receiver that is offered is the 2-inch Class III type; please see the linked page. Hitch BALLS can be a 1-7/8-inch diameter (or 2-inch or 2-5/16-inch) but a hitch receiver itself, which is mounted to a vehicle frame, will generally be either 1-1/4-inch, 2-inch or 2-1/2-inches square.
