Yes, installation instructions for Curt trailer hitch # C11212 (no longer available) are linked on its product page, right hand side of the page. I have also included a link to them here for you.
This is a Class I hitch so if you are using it for a bike rack you are limited to 2 bikes at most and any accessory used has to be compatible with a Class I hitch. Also with Curt if you are using the hitch for anything other than a trailer you also have to use stabilization strap # 18050 per Curt's warranty requirements.
If you need to tow something, consult the owners manual first to make sure it is acceptable to do so and for the capacities of your 2000 Honda S2000. The correct ball mount to use is # C45510. For a 1-7/8 inch ball use # 19256 and for a 2 inch ball use # 19258.
And for trailer wiring you can use # C59496.
