Based on other hitch manufacturers who carried over their hitch fits from the 2017 to the 2018 models we know that the Ecohitch part # 306-X7315 is a confirmed fit for your 2018 Volkswagen Golf Alltrack. For trailer wiring you'd then want the part # 119250KIT which is a zero-splice kit.

The Yakima SkinnyWarrior Roof Basket # Y07014 is perfectly compatible with the factory crossbars on your VW AllTrack. The only thing you will want to check is the actual crossbar spread (distance between the front and rear bars - center to center). The SkinnyWarrior Basket works with spreads of 24" to 38". I'm pretty sure the factory bars on the AllTrack are adjustable front to back so this shouldn't be an issue, but it doesn't hurt to verify.

We have the Curt hitch part # C11422 which is a fit for your 2017 Volkswagen Golf Alltrack and would allegedly only require trimming if you had the 4Motion model. If you didn't have the 4Motion model this would not require any trimming at all.

The 225/55-17 tires are bigger than the manufacturer normally puts on the vehicle. If you have these tires, you will have even more limited clearances so I recommend only using the Konig Premium Self-Tensioning Snow Tire Chains - Diamond Pattern - D Link - K-Summit - Size K44 # TH02230K44. These chains require no inner clearance as they only ride on tread portion of the tire. I've linked a video of this to assist. The issue with hitch adapters is that they cut the capacity of the hitch they are installed in by 50 percent and add quite a bit of movement. They really aren't an ideal solution but the part # HTAD will work in a Class I hitch like the # 24949.
You should note too that the weight of this adapter is 7 lbs. So if you add up the weight of your bikes and the rack plus the adapter you are at 101 lbs which would be 1 lb over the reduced capacity of the hitch at 100 lbs.

Trailer hitches have to be able to flex. They all do. They absorb stress and flex back into position when that stress is relieved. The noise you are hearing is likely something rubbing against the hitch. The Draw-Tite hitch # 24949 is almost completely hidden from access though without removing the rear fascia.

When it is installed only the hitch opening hangs below the rear bumper which makes it mostly hidden as well as helps with ground clearance.
