The hitches that fit your 2019 Volkswagen Golf R like the EcoHitch # 306-X7332 all require some fascia trimming. This EcoHitch is the way to go though as it's only option that has a 2 inch opening which more accessories are made for and is in general is stronger.

There are a few different ways to run the power wire of a powered trailer wiring harness like the part # 118637 that you referenced. Typically the easiest way is to run it out the floor of the vehicle through a grommet in the floor and then up to the battery using zip ties to secure the wire away from exhaust and moving parts.

To install the EcoHitch # 306-X7333 or # 306-X7332 on a 2019 VW Golf R, a notch measuring 3 x 3-1/4 inches would need to be made in the underside of the bumper fascia. For both hitches, the notch isn't noticeable from the rear, only if you're looking up at the underside of the bumper.

What it seems to me, is that your current point of installing the base plates are not lined up properly per your description. It's best to have the base plates # 521227-3 parallel before any drilling for your tow bar to attach correctly. I contacted our representative at Roadmaster and they haven't experienced any mounting issues on these base plates for a 2001 Volkswagen Golf. For installation, the Rhino Rack ROC25, part # RR23QR, is not intended to line up with the factory roof rack holes during install. It will install exactly as you have it right now in your picture.
I can't recommend opening the moon roof while having a roof rack installed, as there is a chance that the rack will contact the glass as it opens or the noise and wind will change direction because of the crossbar and affect the passengers or cargo in the vehicle.

I noticed that you purchased the Curt Hitch # C11412 and you are correct that Curt recommends using a stabilizing strap on non-towing applications. The part recommened is Curt's Trailer Hitch Suppport Strap part # 18050.
One end of the strap connects to your bike rack while on most model vehicles the other end attaches at the top edge of your trunk. The strap has a cam buckle that is used to tighten the strap.

When you install an aftermarket part on your vehicle like a trailer hitch in this case, you are protected by the Magnuson–Moss Warranty Act. This act states, in part, that unless the installation and the part caused a problem then the warranty cannot be voided. I recommend looking it up online.

The bump or dip in the road would have to be fairly severe for the ramps on tow dolly # RM-2050-1 to make contact with the bottom of your 2018 Volkswagen Golf.
