The answer to your question will depend on your axle diameter. If you have a 2-3/8" diameter axle you can use the Dexter Trailer Springs Over-Under Conversion Kit # K71-384-00. Based on the specs of the trailer it wouldn't be any larger than this but it is possible it is smaller. I do have an option for you but we don't offer a replacement converter section for the American/Centurion CS6000. Unless you have one of the Boondock Lite or Boondock Edge versions of the 2019 NuCamp Tab 320's I would refrain from lowering it any more to the ground. With the stabilizers and sewer drain hanging below the camper this will likely cause clearance issues over speed bumps, hills and entry curbs.

If the trailer brakes activated when the pin was pulled on your breakaway you would have noticed. You would have heard the trailer dragging, felt it while towing, or seen the smoke coming off of the tires as you dragged it along. More than likely the battery on your breakaway was dead and needs to be charged so the brakes never engaged. This means your trailer brakes should be fine.

Most of the time you can easily just replace the gate valve and save a bit of money but if you're wanting to just swap it all out then you'll most likely need to do a bit of modification. The gate valves can be unbolted whereas the hubs are glued into place so you'll have to find a good spot to cut them off and then determine what components to use based on the what you have.
