You can definitely upgrade to a larger tire size as long as you have at least 4" of clearance above your current tire. For a 10-ply tire you need a Load Range E rating which is only available on a larger size tire like ST225/75R15. The correct replacement brakes for your 2020.5 Forest River R-Pod 180 is the Electric Trailer Brake Kit # AKEBRK-35 which includes both sides, or your can use the # AKEBRK-35-SA you were looking at that are self adjusting.
For replacement a replacement hub and drum assembly you will need the # 84546UC3-EZ which includes new bearings, races, and a new grease seal as well.

Your 2014 Forest River Grey Wolf 26DBH was manufactured with 3,500lb tandem axles. These will have most likely came with a 10" standard brake kit like the etrailer # AKEBRK-35. It's possible that you might need a new inlet cap like part # A0120SBKVP, but it is worth noting that I believe you're filling your fresh water tank a little too much. Unless you are parking on a pretty aggressive grade or you have your tank full to overflowing there shouldn't be a leak at the cap.

On the Lippert High-Speed Power Stabilizer Jack 337199 it would appear that the only parts of the legs that are replaceable are the Electric Stabilizer Jack Support Arm # LC1134122 and the Foot Assembly # LC157584.
