My dad used to have a 1967 Cadillac Sedan DeVille. I have been inside and out of the car helping him work on it. I think your best option is to use wiring harness # P239003HD. It has a 3-prong receptacle and the wiring for the bulb. Better yet you could use # P230004HW which includes the heavier wire and receptacles along with relays to protect the old wiring on your Caddy.

We have not installed one of these on a 2000-2005 DeVille. I have included a link to the instructions that shows where the hitch is in relation to the rear bumper. See the top left corner. The picture shows the drawbar in the hitch, but the drawbar can be removed when not in use. You will not be able to see much of the hitch unless you kneel down level with the car.
