If you're having trouble removing the hub/drum, you'd first want to start at the rear of the assembly with the brake adjuster screw. In order to help the hub slide off the brakes, loosen the star wheel (turn counter-clockwise) a few turns to remove some pressure. Then, you'll need to remove the grease cap, followed by the cotter pin/spindle nut, and then the washer and outer bearing. The hub should then just pull right off but if you're having trouble they do make a tool to assist with this called a hub puller. It basically just attaches to the hub face and then you use a slide hammer to remove the hub. That said, I've never had a trailer hub I've had to do this on so there may be another issue or something else being overlooked.
