In order to carry two kayaks on a 2019 Honda Odyssey with factory roof rack you'll indeed need to do so on their side with j-style cradles like the etrailer Kayak Roof Rack part # e98878. There should be no issue fitting both of these on the same crossbar since you can adjust the pitch of the upright or offset the carrier.
