When you have the truck hooked to the gooseneck trailer, do you stop on the scale with just the truck ?

Yes, if you wanted to determine what the pin weight of your trailer is you'd basically need to weigh the rear axle of your truck at a weigh station without the trailer connected and then connect the trailer and get the weight for the rear axle. Computing the difference between these numbers will give you the pin weight.
