How wide do my towing mirrors need to extend for a 8x33 Gooseneck trailer?

You will need to extend your towing mirrors however far out will give you the best view of the side of your trailer - every driver and towing setup is different so it essentially be like when adjusting your mirrors for regular driving as there isn't a set "move it this far out for this type of trailer" setting on the mirrors.
If you're getting the K-Source Custom Extendable Towing Mirrors # KS62075-76G then that makes things even easier because you can manually extend the mirrors to different points and then you still retain that power function (if your vehicle already has that function) to get the best angle possible.
