I would be happy to answer your question and find you a solution. Functionally the Hollywood Racks Sport Rider SE item # HLY84FR will fit in any 2" receiver. However, the wind turbulence and bouncing this bike rack will encounter mounted behind a 5th wheel trailer will eventually cause a parts failure. In the event of a failure the warranty will not be honored if it has been used behind a trailer it is not rated for.
For a comparable bike rack that is rated to be hauled behind your 5th wheel trailer, I recommend the Swagman E-Spec Bike Rack for 2 Electric Bikes item # S94FR. This is also a frame mounted bike rack. It has a 10 lbs less capacity per bike but if that is an issue you can always remove your batteries to get to that weight. Removing your batteries is recommended anyways if you are transporting ebikes.
There is also an adapter for fat tires. The Fat Tire Adapter Kit for Swagman G10 and E-Spec Bike Racks item # S64679 will accommodate tires up to 5" wide.
