Bike carrier manufacturers do offer some single-bike racks but these are for specialty bikes such as tricycles or recumbent bikes that will not fit carriers intended for standard bikes. For carrying regular bikes the smallest capacity offered is 2-bikes.

The product page you referenced is for hitch-mount bike racks that require a hitch receiver be present on the rear of your Odyssey. For example, the most popular 2-bike hitch-mount carrier for owners of the 2012 Odyssey is the Swagman XTC-2 platform type carrier # S64670. Platform carriers suspend the bikes by their wheels rather than by their frames. There are also hanging style hitch-mount racks available.

If your Odyssey is not equipped with a hitch you could add one with the Draw-Tite # 75270, then you could choose from a variety of hitch bike racks.
