I need a new A/C for our 5th Wheel. I have attached photos of me wiring and connections

Based on the pictures you provided the 3-prong connector is most likely your power, ground, and neutral and the communication wires between the rooftop unit and controller must be separately hardwired. To replace your unit you would need to cut the connector off and hardwire each connection.
You could possibly replace just the rooftop unit but you would need to contact Dometic with all the info on your tag to get the correct wiring diagram and would then need to cut the communication wires off of the plug of the new unit and hardwire them to the corresponding wires on the controller. Even with hardwiring in a new unit there isn't a guarantee that the new unit will properly communicate with the controller.
In your specific situation the best route is to just replace the entire system to avoid spending on money on something that might not actually work. For this I recommend the Furrion Chill HE RV Air Conditioner System # FR55PV.
