Does a Cargo Carrier Affect the GVWR of My 2021 Mercedes Benz Sprinter 3500?

Yes. A cargo carrier counts toward the OCCC weight rating also known as the gross vehicle weight rating. This rating includes the total amount of weight in occupants, cargo, water and trailer tongue weight that can be added to the vehicle. It is important that this weight does not exceed the manufacturer's weight rating of the vehicle. The total weight of the 22x59 Rola Cargo Carrier for 2" Hitches 59502 you looked at is 73 pounds.
For a lighter solution, I recommend the 19x60 Curt Cargo Carrier for 2" Hitches - Aluminum # C18100. This carrier only weighs 29 pounds because of its aluminum construction compared to the steel construction of the Rola. It is our lightest carrier for a 2" hitch receiver. It is important to note that the shank of the Curt carrier measures 4-1/2 inches from the center of the shank pinhole to the closest part of the rack when folded up. In order to make sure the carrier can clear your rear bumper, I recommend measuring from the center of the pinhole of your hitch to the outside face of your rear bumper. As long as that measurement is less than 4-1/2 inches, you are good to go!
To add extra security to the Curt carrier for theft-deterrence, I recommend the etrailer Hitch Pin Lock # e98880.
