Where Should The 12 Volt Wires Be Connected On A 7 Way To 6 Way Wire Connection?

If I use the 7 to 6 wire pin connection and the book says I have to disconnect the negative terminal on battery and the pin setting does not allow hot wire. Used a 7 pin to 7 pin on last vehicle but on Grand Cherokee trying to keep front from such a large hole. Unless I misunderstood. Is the 1 oclock position the hot lead in

I will start by saying I can find nowhere that says your 2020 Jeep Grand Cherokee needs to have the battery disconnected in order to be flat towed. However, I did find a few things about people contacting the Jeep Product Information Center and them then saying that this was something they had originally said in the owner's manual, but is no longer needed for flat towing.
With that being said, it is required that you use the Stop Light Switch Kit # RM-751449 if you are going to be using something like the Roadmaster InvisiBrake # RM-8700. Due to the stop light circuit going dead while in tow, there would be no way to signal the motorhome that the brakes in the vehicle are being applied by a supplemental braking system. A stop light switch is a workaround for this and is needed in the vast majority of Jeeps.
As to the hot lead, you are correct in that the 1 o'clock position on the 7 Way plug will be the 12 volt hot lead. The 6 way is a bit different though and the 12 volt port is in the center. I included a diagram showing this to help as well.
