For truck beds shorter than 8 feet, using a Sidewinder such as the one you described or a sliding fifth wheel hitch would be necessary to provide the proper clearance between the front of the trailer loft and the rear of the truck cab.

The Sidewinder would be a more convenient option, as it would provide more clearances which would most likely allow 90 degree turns without worry of anything hitting your truck cab. You wouldn't need to exit the truck cab to actuate the sliding mechanism, either.

Because a Sidewinder is specific to the model of pin box used on your fifth wheel, I will need to know the name of the manufacturer and the model number of the pin box currently on your fifth wheel. The # ST400-5AS16K is compatible with fifth wheels that use the Leland 7910, 7920 and 7921 pin boxes. This Sidewinder has a 16,000 lb capacity.

If you click the provided link, you'll be taken to our Sidewinder FAQ article. At the bottom of the page, you'll find a table that lists which Sidewinder models are compatible with which OE pin boxes. Your existing pin box should have a sticker on it somewhere that lists the model number and manufacturer.
