In order to use the Curt TruTrack Weight Distribution System w/ Sway Control # C17501 in your 2-1/2" hitch you would just need to get the Curt Weight Distribution Shank for 2-1/2" Hitches # C17131 and swap that out with the shank that comes with the weight distribution system. The # C17131 is the maximum 6" rise and 2" drop you mentioned. The # C17131 shank has holes 1-1/4" apart so that you can get level with your trailer.
There is also the Curt Weight Distribution Shank for 2-1/2" Hitches # C17132 which has a maximum 12" rise and 9-1/4" drop. It also has the holes spaced 1-1/4" apart for attaching the head unit to get your trailer level.
