Expert Reply:
The Dexter 8-249 hub/drum is used on a 3500 lb axle, and would be compatible with a 10 x 2-1/4 inch brake assembly.
I'd recommend self-adjusting brake assemblies like part # AKEBRK-35-SA. After an initial adjustment, your brakes will self-adjust so you'll always have optimal braking performance. The brake assemblies include the mud and crud plugs to cover the adjuster holes, but the mounting hardware is sold separately as part # BRKH10B.
I'd also recommend carefully inspecting the armature surface of your brake drums (where the magnets ride against). If this surface is pitted or grooved, you'll want to replace the hub/drums as well using part # AKHD-655-35-EZ-K, which includes the bearings, races, grease seal, dust covers, lug nuts and even the grease.
I've linked some instructional videos that you might find helpful.
