It looks like there are just a few bolts to remove on your Trek Verse 2 bike and your fenders will be off. That said, the Saris Freedom Bike Rack for 2 Bikes - 1-1/4" and 2" Hitches # SA4412B that you were looking at is 100% compatible with bikes that have fenders and baskets due to the frame mount cradles. So if you were looking into this bike rack, you won't need anything else other than a trailer hitch receiver.
