For your 1981 Ford F-250 with the 8' bed I recommend installing the Demco Hijacker Premier Series Above-Bed Base Rails and Custom Installation Kit for 5th Wheel Hitches # DM8552005-71. This provides industry standard rails for Demco, B&W, Curt, Draw-Tite, Hidden Hitch, Husky, Reese, and Valley above-bed 5th-wheel trailer hitches.

Then for your 5th wheel hitch, if you don't already have one, I would look into the Demco Recon 5th Wheel Trailer Hitch - Single Jaw - Above Bed - 21,000 lbs # DM8550043 which will fit onto the rails perfectly. This hitch is rated for 21,000lbs gross towing weight and 5,200lbs vertical load. The hitch can be set at 15-1/2", 17-1/4", and 18". I attached a demonstration video for you.
