So it says 350lb vertical weight capacity, would it support a dirt bike 243lbs and a hitch carrier 48lbs?

Since the Curt Front Mount Trailer Hitch Receiver - Custom Fit - 2" # 31514 you were looking at for your 2007 Nissan Xterra has a 350lb vertical load limit it will have no issues carrying your 243lb dirt bike and 48lb carrier as you will be 59lbs under the max.
One thing to keep in mind is you will need to make sure you will not be blocking the headlights on your vehicle, as that could lead to a traffic violation.
