You could use a system like Rear View Safety Wireless Hitch Camera # RVS-83112. This is a wireless camera system that is specifically designed to be mounted on a hitch ball mount for backing up, but you could secure it to the front of your truck bed or anywhere else that would provide vision when backing up to your 5th wheel hitch. This is completely wireless and uses a 9V battery for the camera and the monitor plugs into the 12V cigarette outlet in your vehicle. It features a 120 degree viewing angle and also provides excellent night vision even in complete darkness. I have attached a demonstration video for this product.
