I have some solutions for you, but there is not an expandable Thule rack that is rated for use on the back of a 5th wheel trailer. Instead, I recommend using the Swagman Trailhead 4 Bike Carrier # S63381, which is a 4 bike rack that is designed to be used on the back of a 5th wheel trailer or vehicle with a 2" receiver. The Trailhead is a great value rack that will stand up to the rigors of travel on the back of your 5th wheel and give you the flexibility to carry up to 4 bikes.
The Trailhead comes with an anti-rattle hitch pin but if you'd like to lock the rack to the back of your trailer and secure the bikes as well, I recommend using the Anti-Rattle Hitch Lock and Cable for Swagman Bike Racks w/ 2" Shanks - 8-1/2' Long # S64030. This gives you a locking anti-rattle hitch pin and cable lock to secure all of your investments.
If you're carrying any bikes with aggressive step through frames, you'll also need a bike frame adapter bar like the Swagman Deluxe Bike Frame Adapter Bar for Women's, Children's, and Alternative Frame Bikes # 64005. This will allow you to carry the bikes level on your hanging rack.
I've linked some review videos of this rack for you to check out.
