Installation of Curt C51180 Echo Wireless Brake Controller on 2016 Ford Transit T350
Question:
Are all 7 pin connector wire connections needed to operate this, or would it also work if I only have the 4 wires gnd, stop, lturn, rturn connected to a 7 pin socket?

The only functions of the 7-way that need to be active to operate the Curt # C51180 Echo Wireless Brake Controller are the right turn/brake lamp, left turn/brake lamp, running lamp circuit, ground and a 12-V feed from the vehicle battery. You won't need the input from the brake controller.
To install the Echo on the Ford Transit T350 (assuming it doesn't already have a functional 7-way trailer connector), you'll want to use part # C56327 and part # ETBC7L.
You won't need the brake controller connection offered by either harness, but you will need to connect to the battery positive terminal as shown in the installation instructions for both versions of the harness that I've linked for you.
I've linked to an installation video that you might find helpful.
