The red mini side marker lights. What is the lowest voltage they can run at and still have a decent amount of light? Will 6v cut it?

The Optronics LED Mini Clearance or Side Marker Trailer Light # MCL13R2B that you referenced was designed to be used on a 12 volt power system.
If you power them with a lower voltage setup you might get them to function but you'll also shorten the lifespan of the light by a considerable amount.
