Will I be able to hook up my current tailgate cables to keep the tailgate from falling down on my bumper?

Yes, the stock tailgate cables on your Ram Pickup can be used with the Stromberg Carlson 100 Series 5th Wheel Tailgate with Open Design for Dodge Trucks, part # VGD-02-100.
I confirmed with my contact at Stromberg-Carlson that this tailgate is intended for use with the stock cables that came with your vehicle.
I have included a brief installation video for this product; please note that it does not show the re-installation of the stock cables.
