Adding a third unit would make the most difference. The Furrion Chill # FR42PV units 15,000 are great options for replacements and will work very well producing the most BTUs, but having 3 units versus two will absolutely help more in cooling your Holiday Rambler. You will simply need to make sure you have the power needed for the start up of the units. There aren't any AC units that will keep up with Arizona heat, so additional units is really your best option. Most units will be able to cool the RV to about 20 degrees below the outside temp when working really hard based on the square footage, so more units will mean cooler indoor temps.
The AC units from all manufacturers work at about the same temperatures. You can still use your gas furnace separately as wired to your current thermostat. The white covers will naturally draw less heat to the unit, so a white shroud is my recommendation for you.
