Are the safety cables easy to unhook? We need to take tailgate off to load truck camper.

The Stromberg Carlson 4000 Series 5th Wheel Louvered Tailgate part # VGD-10-4000 which is a fit for a 2018 Ram 1500 is very easy to put on and take off. In regards to the safety cables, all you need to do is unloop the end that attaches to the vehicle via a stud but there won't be much force required for this. There won't be any tools required for this either nor to finish the removal process which entails tilting the tailgate back and pulling up and out on one side. It may take a few times to get used to it but once you do get the hang of it it will be much easier to do each time. With time, you'll learn the exact angle you need to free the tail gate so it won't be time consuming at all. The tail gate is also much lighter than the factory option therefore easier to work with.
