I would recommend the Draw-Tite Class III receiver, part # 75120. A Class III hitch uses the 2 inch receiver opening, versus the 1-1/4 inch opening used by the Class II. Having the more common Class III will allow you more flexibility in choosing hitch mounted accessories like bike racks or cargo carriers.

According to my research, the 2000 Sienna has a 2000 lb towing capacity, or 3500 lbs if equipped with the tow package. If you do not know if the van has the tow package, you can call the Toyota customer relations hotline with your VIN number, and they should be able to tell you.

If you were planning to tow with your Sienna, you might also need the following to complete your towing system:

Ball mount, part # 2753
Wiring harness with trailer connector, part # 43475
1-7/8 inch trailer ball, part # 19260
2 inch trailer ball, part # 19247
Hitch pin and clip, part # PC3
Locking hitch pin, part # e98882

I have linked you to the installation instructions for the hitch I recommended. I have also linked you to an install video showing the hitch being installed on a 1998 Sienna. The procedure for your 2000 model would be identical.
