When picking out trailer tires for a popup (or any trailer) you want to match the size you need and also the amount of weight capacity that the trailer needs. The Load Ranges offer a way to organize capacities but in general you don't have to stick to any particular Load Range as long as the weight capacity is fine.
So the trailer tire part # AM1ST77 that you referenced is a Load Range D tire in the size ST175/80D13 which has a capacity of 1,610 lbs at 65 psi. If your Jayco 1007UD weighs less than the combined capacity of two of these tires (3,220 lb) then this tire would work well for you.
