I do have a great option for you, however you won't be able to add a factory brake control switch assembly to the dash of your 2016 GMC Canyon for use with an aftermarket brake controller like the Prodigy P3 # 90195 that you were looking at. As you kind of alluded to in your question, the switch would require OEM/factory wiring that isn't present on your Canyon for installation and it also would not be compatible with the P3 (or any other aftermarket controller).
If you are interested in a trailer brake controller that allows for this cleaner OEM appearance I recommend taking a look at the Redarc Tow-Pro Elite # RED44FR. This is an excellent proportional brake controller that features a small control knob that mounts in the dash (or any other accessible area - see attached images) for a clean look and a sigh of relief for your knees. Its unique design also allows you to switch between two different braking modes (proportional or time-delayed) so that you are always in control.
I have attached a video demonstration that you can check out as well.
