Based on my research your 2016 Rockwood HW276 Pop-Up camper has a closed length of 19.3 Feet. With this in mind the Classic Accessories Deluxe PolyPro Heavy-Duty Cover # CA80043 you referenced will work perfectly, even with an AC unit at the top of your camper.
This cover is designed specifically for pop-up campers that measure between 18 and 20 feet in length. Because the cover uses an elastic hem to grip the camper, its folded height is not a concern and it will fit over the AC unit without issue.
I have attached a short video demonstration on this cover and as you can see the camper we installed the cover on also has a rooftop AC unit.
