Is there a way to quick disconnect the cameras if they are trailer mounted?

There's actually a version of the Rearview Safety Backup Camera kit part # RVS-770614 that comes with a quick disconnect kit for trailer applications like what you mentioned. For that you'd want the part # RVS-770614-213 instead. I attached a picture of what the quick disconnects look like as well. These allow you to easily disconnect the camera wiring of the trailer from the vehicle.
