Do you offer an all stainless disc brake package for 8 bolt 6 1/2inch hubs? I can only find the Dacromet + Stainless combination?

Yes, there are all stainless steel disc brake kits that have an 8 on 6-1/2" bolt pattern.
The Kodiak Disc Brake Kit # K2R858DS is designed for 8,000 lb Dexter axles with a #42 spindle, 4-bolt brake flange and idler hubs with 5/8" diameter wheel studs. The Kodiak Disc Brake Kit # K2R89DS is the same but fits idler hubs with 9/16" diameter wheel studs.
The other kit available with an 8 on 6-1/2" bolt pattern is the Kodiak Disc Brake Kit # K2R712S which is rated for 7,000 lb axles with #42 spindles, a 5-bolt brake mounting flange and an idler hub with 1/2" diameter wheel bolts.
I've added links to video reviews of the kits for you to take a look at.
