Should I max air on trailer tire even in really hot weather?

Yes, trailer tires should always be inflated to the maximum psi as listed on the sidewall regardless of the outside temperature or the type of load you have on the trailer. Inflating them to their maximum psi allows them to maintain their load capacity so that you do not accidently overload the tires, which can lead to excess heat and tire failure.
The Kenda K353 Bias Trailer Tire # AM10068 you were looking at has a maximum load of 1,250 pounds at 105 psi. The tire should always be inflated to 105 psi.
