For your utility trailer with a 2-1/2" wide tongue I recommend checking out the Square Jack w/ Footplate # MJSQ-2500B.
This jack has a 7-1/4" bracket height when it is retracted and extends to 22-5/8", giving you 15-3/8" of travel. It has a 2,500 lb lift capacity, which is more than enough for a 3,000 lb trailer since the jack only lifts a portion of the trailer's weight.
