Demco Hijacker Premier Series Double Pivot 5th Wheel Trailer Hitch # DM6076P-16K mounts to industry standard above the bed rails. There are several rail kits that fit your 2016 GMC Sierra 1500 short bed so yes, the hitch will fit your truck after a rail kit is installed.

Since you have a short bed truck though you will need a slider hitch, not a fixed hitch, unless your trailer was designed with a tapered front cap specifically for towing with a short bed truck. Otherwise the slider version is # DM6076P-UL-16K.

For a custom fit rail kit I recommend # C16400-204. Custom kits require less drilling so they install in less time and are easier in general to install compared to universal or semi-custom kits. I have linked some review videos of the hitches and installation kit for you.
