Since transmission and engine oil coolers are more of a universal fit you will just need to take the dimensions of the Derale Combination Transmission and Engine Oil Cooler # D15902 and see if you have enough space under the hood of your 2000 Jeep Cherokee for fitment. There isn't really a known temperature to expect from it since that is all relative to where you live, drive, how much weight your vehicle carries, etc...
The cooler measures 17" wide x 12-1/2" tall x 3/4" deep so you will want to do some measuring to see if or where it will fit. We recommend trying to install a cooler between your grille and the AC condenser core but if that isn't possible the next best place is between the condenser and the radiator. If there still isn't enough room there then we recommend between the engine and radiator.
My contact at Derale said that the fittings that come with the cooler for the oil should be what you need, but you will need the kit # D13028 for 3/8" x 3/8" hose splicers, or kit # HH41413.
I have attached a few helpful articles that you can reference for more information as well.
